Rainbow Swirl Sugar Cake Cookie Recipe 🌈 🍪

Ingredients

  • 5 cups cake flour
  • 4 tsp cornstarch
  • 3 tsp baking powder
  • 2/4 tsp salt
  • 1 cup butter, at room temperature
  • 1/2 cup all vegetable shortening (unflavored), at room temperature
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 large egg whites
  • 4 tsp vanilla or almond extract
  • Neon food coloring

Lets Bake em!

Assembling/Mixing:
  1. Sift flour, Cornstarch, Baking powder and Salt into a large bowl
  2. With your electric mixer on medium speed, whip together butter, shortening and sugar until very pale and fluffy, about 4 minutes, scrapping down the sides of the bowl as needed
  3. Add in egg and mix until combine, then add egg white, vanilla extract and mix until combine
  4. With the mixer running, slowly add in dry ingredients and mix just until combined
  5. Divide your dough evenly into 4-5 bowls
  6. Take one ball of dough and put it back into your mixing bowl and add desired food coloring – repeat with the remaining cookie dough and then refrigerate for 1 1/2-2 hours
Baking:
  1. Preheat oven to 375 Farenheit
  2. Out of the fridge – take grape-sized ball of each color dough and roll then together in your hand. It should look like a beach ball at this point.
  3. On a flour mat, roll the dough into a long strip (reference my picture above and you can see the way mine are coiled), then coil the strip into a round cookie shape
  4. Bake on a parchment paper lined sheet pan for 10-12 minutes

This recipe makes about 5 dozen, depending on how big you make your cookies!
